My family loves to eat cornbread they could eat it all day if they could. And sometimes it’s hard to find the perfect recipe that your whole family will enjoy, so I wanted to share the recipe my mom gave me, it is so easy, and delicious and also healthy for your kids. Plus you can eat cornbread with pretty much everything. I love to eat cornbread with tomato soup, it is so good, you really have to try it. Sometimes I make cornbread plain, but sometimes I love to mix things up and then I will add some soft cheese, or a bit of ham and pickles. You can even make sweet cornbread, just don’t add so much salt, you can add some sugar, or vanilla extract, and voila, you have sweet cornbread. And you can even put some fruit jelly on top, and you have a real treat.

1 Baking powder
Teaspoon of salt
100g of cottage cheese
About 1dl of yogurt
1dl of mineral water
1 small glass of cornflour
( I use the 1dl glasses as the measurement)
1 small glass of polenta (small 1dl glass)
About 50ml of vegetable oil
Preheat the oven at 180 degrees C
Mix all the ingredients
Put some vegetable oil in the baking tray and spread it around, so the cornbread doesn’t stick.
Pour the mixture in the baking tray, and put it into the oven.
Your cornbread will be done in about 20-30 minutes, depends on the oven you are using.
