Easy pasta and veggie meal

Hello, my darlings. Today was one of those days when I don’t feel like cooking. But I know I have to, kids need to eat, we need to eat something that isn’t a sandwich. or some sort of fast food. So I made this easy, one-pot pasta and veggie meal. I super easy, and so delicious, and most importantly, it’s mess-free. No dirty dishes equals less stress for mama. I am going to add pictures with the recipe so you visually follow the recipe.

For this recipe, you are going to need 1 onion, 1 carrot, half a bag of frozen peas (about 200g), half a bag of frozen corn ( about 200 g), some sort of smoked ham to add to the flavor, and a bag of your favorite pasta. If you don’t eat meat just add some sort of meal replacement, and it will be just fine.

You will start by adding chopped onion, carrot, and ham into the pot, and add vegetable oil, and cook for a bit, or until onion softens, then add your frozen veggies, I used peas and corn but you can add any kind of veggies your kid’s love, you don’t have to use the same ones like me, and it will be just as delicious. And don’t forget to add water, just enough to cover the veggies, and let it cook for about 30 minutes. And after you add a bag of pats in the pot, and don’t forget to add more water, a cook for another 10-12 minutes, depending on the pasta. And you can serve it with some delicious fresh salad, and you kids will love it. I mean, who doesn’t love pasta. I know I do. I can eat it all day, every day.
