Hello, my darlings. Today, I wanted to share with you delicious and simple peas and meatball recipe. This recipe is so versatile. You can serve it with the pasta, or mash potatoes, or you can serve it with the tortilla. Whatever you decide, it will be so delicious, and kids will love it. If you have older kids, they can even help you prepare

1 1/2 Red onion
1 Pack of frozen peas and carrots (450 g)
2 Veggie soup cubes
1 Bolognese sauce

4 Slices of brad
1 Egg

First, start by cutting the onions into smaller cubes, and add them into the pot with a tablespoon of vegetable oil, and let it cook for about 5-10 minutes. After the onion gets nice brown color, add one bag of frozen peas and carrots, and let them cook for a bit before adding one glass of water, about 2 dl, and 2 cubes of vegetable soup. An let it cook for about 35-45 minutes. We want them to be nice and soft. while cooking, check if you need to add more water. You don’t want your veggies to burn.

While peas and carrots cook, you can make your meatballs. In a large bowl add the mincemeat, bread slices, bread crumbs, 1 egg, salt, pepper, garlic powder, and mixe everything together. Form little balls, and put them in the oven on 180 degrees, and cook them until they get a nice golden color.

After meatballs are done, add them in the pot with peas, and add bolognese sauce,and a bit more water, and cook for another 5 minutes.
You can serve this on a tortilla or with pasta. Or, you can serve it with mash potatoes. That is up to you, or your kids, whatever they prefer more. Hope you like this recipe, and if you do, don’t forget to subscribe, and I will have a new recipe for you every Monday.
